First Course
Crunchy Kale Salad
A vibrant, nutrient-dense opening course featuring raw chopped kale, sweet apples and no-salt cashews in an avocado-oil blush wine vinaigrette.
Second Course
Stuffed Zucchini Rolls
Raw zucchini ribbons are hand-rolled around a velvety, cold-blended cashew and tofu ricotta filling and topped with chopped tomatoes tossed in a zesty, sugar-free French vinaigrette.
Third Course
Fresh Mango and Strawberries
Chilled, tropical mango and freshly sliced red strawberries with a dollop of plant-based whipped cream.
